- 8 3/8 cups cauliflower 1 small head
- 1/3 cup chickpea flour besan
- 1/2 cup raw cashews
- 3 garlic cloves
- 2 inches ginger piece, 25g, finely grated
- 1/4 cup sunflower oil plus extra to grease
- 2 1/16 cups yoghurt thick Greek-style
- 1/4 teaspoon chilli powder
- 1 teaspoon seeds carom, from Indian food shops u2013 substitute with fennel seeds
- 3 teaspoons Garam Masala each, and ground cumin
- 1 cup creme fraiche
- coriander sprigs
